View Full Version : ISO: Chili Mac and Corn Sticks from 5 Star

I was browsing through the 5-Star Cooking Light book at Barnes and Noble last night and have been thinking about the Chili Mac and Corn Sticks shown in a picture. Could someone post these recipes for me?? I'm not sure if I'm going to buy the book...my husband's a vegetarian and I don't know know if there are enough maindish veggie recipes or recipes that could convert easily. Any opinions? Thanks so much in advance.

I found the recipe for the Chili Corn Sticks but still need the chili mac if anyone has it. Thanks again!

Sorry -- did a search for this in Mastercook but it doesn't look like I have it. Is Chili Mac the full name?

Hi--here's the Chili Mac recipe. I serve it often at our house.
1 lb ground round
1/2 cup chopped onion
1/2 cup chopped green bell pepper
3 cloves garlic, minced
2 cups cooked elbow macaroni (4 ounces uncooked)
1/2 cup water
1 tblsp chili powder
1 tsp ground cumin
1/4 tsp black pepper
14 1/2 oz can whole tomatoes, undrained & chopped
15 oz can kidney beans, drained
8 3/4 oz can whole kernal corn, drained
8 oz tomato sauce
6 oz tomato paste
4 oz sharp cheddar cheese, shredded
Cook first 4 ingredients in a large Dutch oven over medium-high heat until browned, stirring to crumble beef. Drain well, wipe drippings from pan with paper towels. Return beef mixture to pan; stir in macaroni and next 9 ingredients (macaroni through tomato paste). Bring to a boil; cover, reduce heat, and simmer 20 minutes, stirring occasionally. Spoon onto each of 8 plates; top with cheese. Yield: 8 servings (serving size 1 cup beef mixture and 2 tbls cheese)

I just got the CL 5 Star cookbook and tried this recipe tonight (the first one I've tried so far). My husband and I both liked it very much. I made some changes based on what I had on hand - substituted celery for the green pepper, omitted the corn, and used veggie slices instead of real cheese. I also cut down on the cumin. It was very good.
