I'm making the Curried Shrimp w/peanut sauce tonight and bought some broccoli to go with it. Don't have the ingredients to do anything fancy with it...Was wondering if anyone has some suggestions of what to do with this as a side. I usually just steam broccoli with sliced garlic on top. Any suggestions would be appreciated. Thanks, LaurieC

I always steam broccoli and then put spray butter and lemon juice on it. Pretty good and easy!
we usually 'stir fry' broccoli florets with minced or sliced garlic (the more the better http://www.cookinglight.com/bbs/smile.gif !), minced/grated ginger (if we have it on hand), and soy sauce. very tasty, quick, and easy.

I like broccoli best steamed with a squeeze of lemon and a dusting of romano, simple and yummy!

How about a Marinated Broccoli-Corn Salad for a change of pace? This recipe is from Weight Watchers, so it is low in fat, too.
3 1/2 cups broccoli florets
1/4 cup rice wine vinegar
1 tbls dijon mustard
1 tbls honey
1/4 tsp salt
1/4 tsp pepper
1 pkg (16 oz bag) frozen white (shoepeg) corn
1/2 cup red bell pepper, finely chopped
1/2 cup red onion, finely chopped
Steam broccoli florets, covered for 6 minutes or until crisp-tender. Drain and rinse under cold water; drain well.
Combine vinegar and next 4 ingredients in a medium bowl; stir well. Add broccoli, corn, bell pepper, and onion, stir well. Cover and chill at least 3 hours, stirring occasionally. Yield: 6 servings (serving size 1 cup)
CALORIES 105 (9% from fat), FAT 1g; FIBER 3.9g

Thank you for all your quick suggestions; I think I will go with a quick stir fry with garlic and soy sauce, don't think I have any extra ginger on hand. Just enough for the shrimp dish. Will give my review tomorrow. LaurieC

Zesty Broccoli

Amount Measure Ingredient -- Preparation Method

1 garlic clove -- minced
1 pinch crushed red pepper flakes
2 T. olive or vegetable oil
1 large bunch fresh broccoli -- cut into florets (3 1/2 cups)
1/4 t. salt -- (1/4 to 1/2)
In a large skillet, saute garlic and pepper flakes in oil. Add broccoli and toss to coat; saute for about 8 min. or until crisp tender. Sprinkle with salt and stir.

All good suggestions! I was actually just thinking of what we could do with brocolli as well. My father just had some pretty serious heart problems and upon release from the hospital his doctor gave him a quick diet review. The doctor highly recommended broccoli, mentioning that it is one of the best foods. I know I'm going to work harder to get it into my diet, those recipes above sure all look easy and now I've got no excuse!

Especially when I'm making an oriental dish, I'll toss broccoli, sliced squash, slliced or grated carrots, bell peppers (esp red ones) or other additional veggies in along with whatever the recipe calls for. I did this with the Peanutty Noodles and had a beautiful, colorful one dish meal.

Try roasting broccoli - it's a great change of pace. Toss the florets and pieces of stalk, peeled & cut about 1/4" thick, with a little olive oil. Roast at 400 degrees for about 20 minutes, turning after 10-12 minutes & then turning again just before taking it out. Season with salt & pepper before serving. The broccoli gets brown & toasty on the floret ends. You can also crush 2 garlic cloves with 1/2 tsp salt (making a paste). Then add 1 Tbs olive oil & pour this over the broccoli and proceed as above. You can also add crushed coriander seeds (about 2 tsp) to the broccoli before adding the garlic/oil combo. You can treat cauliflower the same way - and they are great together.
