My DH loves apple crisp, but his recipe calls for two sticks of butter!! This one cuts that butter into half a stick and he loved the flavors--coconut, banana, apple and peach.
I did not have Rome apples so I substituted Gala and Granny Smith, and I added peach jam instead of the apricot. Even I liked it (my dessert tastes run more to chocolate), although I might try adding unsweetened coconut next time or cutting the sugar amount--it is a bit too sweet.

If you liked that crisp, you might want to try the Caramel Apple Crisp. You coat apples with Caramel sundae syrup and the crisp is flour, sugars, butter and peanut brittle. I think its in the October issue as well.

I made this recipe a couple days ago from the 2001 annual. No October issue yet so I look back to past Octobers for new recipes. I was very suprised at this recipe, I thought it would be a bit "off" with the addition of chopped bananas. I used Rome apples and golden brown sugar(I usually use dark brown sugar) I thought this recipe was good warm from the oven but after a day or two in the fridge the flavors are awesome. I just put a dollop of vanilla yogurt on top and had a very sinful breakfast! :D

Banana-Coconut Apple Crisp




INGREDIENTS:
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup packed light brown sugar
1/4 cup chilled butter or stick margarine, cut into small pieces
1/3 cup flaked sweetened coconut
7 cups sliced peeled Rome apple (about 3 pounds)
3/4 cup diced ripe banana
1/4 cup apricot preserves
3 tablespoons orange juice


INSTRUCTIONS:
Preheat oven to 375°F.

Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and sugars in a bowl; cut in butter with a pastry blender or 2 knives until mixture is crumbly. Stir in coconut.


Combine apple and remaining ingredients in a bowl; toss well. Spoon apple mixture into an 8-inch square baking dish or 1-1/2-quart casserole. Sprinkle with crumb mixture. Bake at 375°F for 45 minutes or until golden.
