It's around the lunch hour for most folks, but I was looking for some inspiration as to what to have for dinner tonight so take a break and let us know what you're having! Hopefully someone will inspire me not to just go down the street for subs and pizza!

Chickpeas in Tomato Sauce With Feta and Wine

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 tablespoon olive oil
1 onion -- chopped
2 cloves garlic -- peeled and minced
1 tablespoon dried oregano
14 1/2 ounce diced tomatoes -- drained
1/2 cup dry white wine
15 ozs chickpeas, canned -- drained
3/4 cup crumbled feta cheese
salt and ground black pepper to taste


1 Heat oil in a medium skillet over medium heat, and stir in the onion, garlic, and oregano. Cook and stir about 10 minutes, until onions are tender.
2 Mix tomatoes into the skillet, and cook until heated through. Mix in wine, and continue cooking about 15 minutes, until thickened.
3 Stir garbanzo beans and feta cheese into the skillet, and cook 5 minutes, until the cheese has melted. Season with salt and pepper. Remove from heat, and allow to cool about 5 minutes before serving

really great. I had it alone, don had it on pasta. so easy and tasty!! next time, I will double the recipe!

No help here.

Tonight is leftovers so the kids get Chicken Nuggets, Fries & Green Beans. DH gets chicken & leftover braised cabbage, and I'm having leftover Chicken with Mandarin Oranges plus what ever sides I served with it (that I can't remember).

Tomorrow is
Saucy Sirloin Steak
Roasted Garlic & Parmesan Mashed Potatoes
Steamed Broccoli

Leigh - can I come to your house tomorrow for dinner?

My mouth is already watering in anticipation of the great recipes we'll share! :D

It's a busy night for us as we have a baby swim class to get off too and then I have a dog agility class and DH a meeting. So we're making Ham & Swiss Loaded Potatoes. Hopefully a salad to go with it (but probably just steam some broc). There's a recipe but it's basically nuke the potatoes - let cool, cut in half and scoop out. Mix with cheese, ham, sour cream, salt, pepper, garlic powder and green onion. Spoon filling back in and broil until browned (5 minutes or so). We like a sharp cheese and use gruyere.

My favorite - Tuna Steak encrusted with Wasabi paste. If you don't care for Wasabi then Coriander Seeds works well too. For a side either vegetable maki (sushi roll) or rice and freas green beans.

Tuna "London Broil" with Wasabi Cream

Amount Measure Ingredient -- Preparation Method

2 tsps sesame seeds -- toasted
2 tsps wasabi powder
2 tsps cracked black pepper
1 tsp garlic powder
1/4 tsp salt
4 6-oz tuna steaks -- (about 3/4 inch thick)
1 tbsp wasabi powder
1 tbsp water
1/4 c low-fat mayonnaise
1/4 c fat-free sour cream
1 tbsp fresh lemon juice
1 tbsp low-sodium soy sauce
2 tbsps sliced green onions

Combine first five ingredients; rub over tuna. Cover and chill 30 minutes. Combine wasabi and water. Let stand 5 minutes. Stir in mayo, sour cream, juice, and soy sauce. Prepare grill to high heat. Place steaks on grill rack coated with cooking spray. Grill 5 minutes on each side or until desired degree of doneness. Serve with wasabi cream; sprinkle with onions.




NOTES : very good. the rub is very strong and flavorful. so is the wasabi cream. a little cream goes a long way. we had a lot leftover. I did this under the broiler and it came out perfectly. served it with roasted asparagus and don complimented the meal.

Yield: 4 servings (serving size 1 steak and 2 tbsp wasabi cream)
308 cal (30% from fat), 10.3 g fat, 41.3 g protein, 9.7 g carb, 0.9 g fiber

No I hadn't tried that one. It sounds yummy. My method leaves out the cream sauce but I'm normally strapped for time so "slab o' fish" is typically all I have time for. 30 minutes to make cream - I'm lucky to have 30 minutes to make dinner most nights. But I'll certainly keep this one in my bag of tricks.
