Just thought I'd share with ya'll that we made the "shrimp" curry with peanut sauce last night from the new issue (hope you've all gotten yours by now! http://www.cookinglight.com/bbs/frown.gif ) Anyway, I was using only that which I had already had in my cupboards/freezer and therefore substituted 4 boneless chicken breasts for the shrimp. I just chopped up the chicken into bite sized pieces and stir-fried until done. Then added the curry and followed the rest of the recipe!

Y-U-M-M-M-M-M-M-M-M-M-Y! Hubby says DEFINITELY a make again!
