Has anyone tried the recipe for the Spinach Corn Bread with Mango Salsa in the Jan/Feb. 2001 yet? I'm not planning on making the salsa, but was thinking of making the cornbread to go with soup tonight. Any opinions??

This wasn't terrible, but it was too spinachy for me to eat with soup. As my husband said, it's kind of like a dry quiche...this may sound weird, but it didn't really seem like a bread. I will finish this pan, but won't make again. I didn't make the mango salsa to go with it.

I was going to make this this week and was searching for a review...this one was all I could find. Not too promising.
Has anyone else made this?

Ann,
I did make it (without the Mango Salsa) and we liked it. We like cornbread but get tired of the same old recipes. I liked the twist of adsing spinach to it. I don't recall it being dry as I wrote positive comments in the magazine. Hope you like it.

P.S. We really like the Paraguayan Corn Bread in the September 2001 issue. It was a lot of work but worth it.
