View Full Version : HELP-Friend in need of cakes

I have a friend needing to make a cake or cakes for 75 people for a "going-away" party. I told here I would post this question to the CL BBers and see what kind of responses I got. I suggested several different cakes-but still need suggestions with some good, tried and true cakes. Any ideas.......

I think the Texas Sheet Cake would be great. It serves a crowd and you can even make them in the disposable jelly roll pans so when the party is over you just throw the pan away. I have two great recipes, a traditional chocolate texas sheet cake recipe and a pumpkin cake with cream cheese frosting recipe, both are made in the jelly roll pan. You could make these then a small cake with a photo of the "going-away"friends on it as decoration. I know places like Dairy Queen make them,, which might be good because then you would have icecream too! http://www.cookinglight.com/bbs/smile.gif

Thanks for the suggestions. If it is not too much trouble, could you post the two recipes you mentioned-Texas Sheet Cake and Pumpkin Cake with Cream Cheese. I like the idea of the photo on the cake.

You might want to ignore the nutritional info. ..mastercook is so touchy about how you input the ingredients and servings...I am sure they are wrong. Anyway, enjoy...I really love both of these. They are even better the second day...so you can make them the day before and cover with seran wrap. Hope your party is a great one...

Pumpkin Cake

4 whole eggs -- beaten
1 1/2 cups sugar
1 cup oil
1 16oz can pumpkin
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1 can cream cheese frosting
3/4 cup pecans -- chopped

Preheat oven to 350 and prepare a disposable aluminum jelly roll pan.
Mix eggs, sugar, oil, and pumpkin in bowl. In separate bowl, combine flour, baking powder, baking soda, and cinnamon. Add the dry ingredients to the pumpkin mixture. Pour into prepared pan and bake for 25-30 minutes.
Remove cake from oven. Cool and frost with cream cheese frosting and sprinkle pecans on top.

Texas Sheet Cake

2 Cup Flour
2 Cup Sugar
1/2 Tsp. Salt
1 Tsp. Baking soda
1 Cup Butter
3 1/2 Tblsp Cocoa
1 Cup Hot water
2 Whole Eggs -- beaten
1/2 Cup Buttermilk
1 Tsp. Vanilla

****** -- FROSTING
1/4 Cup Butter
2 Tblsp Cocoa
1/4 Cup milk (sometimes I use half buttermilk and half milk, for a tangy flavor)
1 Pound Powdered sugar -- sifted
1 Tsp. Vanilla
1 Cup Nuts(optional)pecans
1 Cup Flaked coconut(optional)I do not use.

Cake: sift together flour, sugar, salt, and soda. In a sauce pan, melt and bring to boil, butter, cocoa, and hot water. Pour the sauce pan mixture over the dry mixture and beat well. Add eggs, buttermilk, and vanilla. Mix well and pour into a prepared 11 x 16 x 1 jelly roll pan and bake at 375° for 15-18 minutes. (My grandma forgot to write down the time when she gave this recipe to me..I think this is usually what I end up cooking it for...just check for when cake springs back to the touch and occasionally it will pull away from the sides of the pan.. I spray the pan with Pam spray)
Frosting: mix butter, cocoa, and buttermilk in a sauce pan and boil until slightly thickened. Remove from heat and add powdered sugar, vanilla, and optional nuts and coconut. Leave the cake in the pan and frost while warm.
