View Full Version : Buttermilk Substitute?

I rarely have buttermilk in the house and here in Canada it is difficult to find lowfat buttermilk. I usually use sour milk (made with vinegar or lemon juice). I wouuld like to make the Buttermilk Blueberry pancakes in the Jan/Feb issue. Would I have the same success with milk or should I wait until I can get the real mcCoy. Is it crucial to use buttermilk incertain recipes? Thanks for your help. I also must mention I check the BB at least 3 times a day. It is alot of fun!!

i've always used the milk/vinegar or lemon juice thing too!

"For 1 C of buttermilk, use 1 Tbl lemon juice or white vinegar, plus enough milk to make 1 C. Let stand a few mins.
OR use 1 C plain yogurt" my betty crocker cookbook.

This works well for me! I just made the spicy chicken ranch wraps (from cl) and it called for buttermilk, and this worked really well for it!

I think it will be fine to "make your own" buttermilk!

The other day I needed buttermilk & used a powdered buttermilk. Its sold with the canned milk. You pretty much reconstitute it with water following instructions on the can.

Hi. I've used the lemon/vinegar thing too. I was looking through a cookbook last night (great reading those cookbooks) and I noticed one recipe's ingredient list had "buttermilk or plain yogurt". Mind you, not all of them had it, but maybe yogurt can be substituted in some cases? Maybe even plain no/low fat? Never tried it, so I don't know. Lilia

In addition to the lemon juice/milk, and the powdered buttermilk, I've used sour cream as a substitute also. For one cup of buttermilk, put about 3/4 cup sour cream, and then add about 1/4 cup milk. You can experiment to get the consistency you want.

When making bread that calls for buttermilk in the bread machine, I often use 1 or 2% milk and the buttermilk powder. Adds a little extra richness and lots of extra calcium!

I've use powdered buttermilk also...whenever I buy the real thing, I stress over ways to use it all up. I hate to throw it out, but I almost always do. I'm going to try some of the alternatives mentioned, since I just used the end of my powdered stuff.

kima- I made my own buttermilk (with 1% milk and cider vinegar) and made the Blueberry Buttermilk Pancakes you want to try - they came out great! Very tasty! Go for it!

Yogurt can definitely be substituted for buttermilk in pancake recipes. I have used both the vinegar and yogurt substitutes in pancake recipes with great success. Sometimes I use cider vinegar instead of white which adds a nice sweetness.

Thanks for the advice re. buttermilk. I will buy some of the powdered kind and will continue with the milk and vinegar/lemon juice combo.Pancakes for breakfast-yum yum!

never bought buttermilk in my life, always use yogurt in all my needs, it works just great!
