looking for a shrimp, rice, cilantro receipe from May/June 1999(??). One dish. Ther is a picture of the dish in a casserole dish lined with foil bag. Wonderful dish and I can't find it. elp.

Could either of these be it? I searched all 1999 for shrimp, rice and cilantro. These were the only hits:

1 1/2 cups (1 [5-1/4]-ounce bag) uncooked instant
rice (such as Success)
1 teaspoon vegetable oil
1/2 pound large shrimp, peeled
2 garlic cloves, minced
1 cup frozen green peas, thawed
1 tablespoon curry powder
1/2 teaspoon salt
2 tablespoons chopped fresh cilantro
2 teaspoons dark sesame oil
Directions.
Preparation time: 5 minutes Cooking time: 15 minutes
1. Cook rice according to package directions, and cool.
2. Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add shrimp and garlic; saute 2 minutes. Add peas, curry, and salt, and stir-fry 1 minute. Stir in rice, and stir-fry 1 minute or until thoroughly heated. Sprinkle with cilantro and sesame oil. Yield: 3 servings (serving size: 1-1/2 cups).

Coconut-Rice Salad With Mango and Shrimp

5 3/4 cups water, divided
1 pound medium shrimp, peeled and deveined
3/4 cup light coconut milk
1 1/4 cups uncooked long-grain rice
1/4 teaspoon salt
2 cups cubed peeled ripe mango (about 2 large)
1 cup diced seeded peeled cucumber
1/4 cup chopped fresh cilantro
1/4 cup thinly sliced green onions
1/4 cup fresh lime juice
3 tablespoons chopped fresh mint
2 tablespoons minced seeded jalapeno pepper
1/2 teaspoon salt
Directions.
1. Bring 4 cups water to a boil in a large saucepan. Add shrimp; cook 1-1/2 minutes or until done. Drain and rinse with cold water. Cover and chill.
2. Combine 1-3/4 cups water and coconut milk in pan, and bring to a boil. Add rice and 1/4 teaspoon salt; cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Remove from heat, and fluff with a fork. Spoon rice mixture into a large bowl; cool.
3. Add shrimp, mango, and remaining ingredients to rice mixture, tossing well. Cover and chill. Yield: 4 servings (serving size: 2 cups).

Marge, I believe the recipe you're looking for is called "Basil Shrimp with Feta and Orzo" from March 2000. It has a picture of the shrimp in a foil bag in a dish. The orzo does look like rice. Unfortunately I only have the magazine so if someone with MC could be so kind, it would help us both out cause otherwise I'd be up all night typing and I'm very tired. Yawn...

Thank you guys so much. This is the first time I have ever used this website and it is great. Jeanne G., this is the recipe I was looking for. I have been driving everyone at work crazy and one co worker brought in all her 1999 magazines in today. If none of you have tried it please do. I've made it several times for friends and everyone loved it. I'm so happy, now I can get some sleep. Thanks again and hope I can help someone else someday.

I thought maybe you meant this recipe, but the mention of rice and cilantro threw me off the track. This is such a good recipe -- one of my favorites -- yum!

I did a search for this for you b/c I remembered it being discussed. The recipe below is what I copied from the thread I found from my search.
Basil Shrimp with Feta and Orzo
1 regular-size foil oven bag
Cooking spray
1/2 cup uncooked orzo
2 teaspoons olive oil, divided
1 cup diced tomato
3/4 cup sliced green onions
1/2 cup (2 ounces) crumbled feta cheese
1/2 teaspoon grated lemon peel
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 pound large shrimp, peeled and deveined
1/4 cup chopped fresh basil
1. Preheat oven to 450º.
2. Coat inside of oven bag with cooking spray. Place the bag on a large shallow baking pan.
3. Cook the pasta in boiling water 5 minutes, omitting salt and fat; drain. Place the pasta in a large bowl. Stir in 1 teaspoon oil and next 7 ingredients (1 teaspoon oil through pepper). Place the orzo mixture in prepared oven bag. Combine shrimp and basil. Arrange shrimp mixture on orzo mixture. Fold edge of bag over to seal. Bake at 450º for 25 minutes or until shrimp are done. Cut open bag with sharp knife, and peel back the foil. Drizzle with 1 teaspoon oil.
