Does anyone have a recipe they could share that uses Gouda cheese? I already have the Mushroom-Gouda Chowder (it is excellent). Thanks.

I love gouda on BBQ Chicken pizza. It's a very simple and low-fat pizza. Crust of your choice, spicy-sweet BBQ sauce, cooked chicken (cooled and coated in BBQ sauce), red onion and topped with a mixture of Mozz and Gouda and after its baked chopped fresh cilantro.
Gouda broiled on sourdough (with some Dijon mustard) makes a great accompainment to Split-Pea Soup.
I also like it on a simple spinach, mushroom, and bacon salad.

I love a big hunk of gouda wrapped in crescent dough (from a can) and then baked until the cheese melts. Yummy!

I make my grilled cheese sandwiches with smoked gouda. I saute mushrooms and onions, slice tomatoes and grill them up with the smoked gouda on whatever bread I have with a little Pam. Terrific!!

I love smoked gouda in an omlette or on a scrambled egg sandwich it adds the texture of cheese but the smoked flavor of bacon!

There's a macaroni and cheese recipe from 1999 that uses gouda or smoked gouda as one of the cheeses. I can post if you're interested. It is our favorite mac & cheese recipe. You steep the milk in onion, garlic and herbs and add a little cayenne pepper to it. These really give it a nice flavor.
BethR, would you post that Mac and Cheese recipe? I love Gouda (the Dutch blood), and would like to try it even though I'm sure my two boys will not let it pass and "real" macaronni and cheese.
Idgy, I have a recipe for a gouda fondue if that's of interest.

Here it is, Beth. My 4-year-old won't touch it (it's Blue's Clues mac & cheese out of the box or nothing) but my 2-year-old loves it. He calls it "Mommy's macaroni and cheese."
[One tip -- drain the macaroni very well or this will turn out watery.]
Macaroni-and-Cheese
Recipe By :Cooking Light Magazine. October 1999. Page: 180.
2 slices (1 ounce, each) white bread
2 cups 2% reduced-fat milk, divided
1/2 cup thinly sliced onion
1 teaspoon black peppercorns
4 parsley sprigs
2 thyme sprigs
1 bay leaf
1 garlic clove, minced
4 teaspoons all-purpose flour
1/2 teaspoon prepared mustard
1/4 teaspoon salt
1/8 teaspoon ground red pepper
4 cups hot cooked elbow macaroni (about 8 ounces
uncooked)
1 1/2 cups (6 ounces) shredded reduced-fat sharp
cheddar cheese
1/3 cup (1-1/2 ounces) shredded smoked Gouda or
Gouda cheese
Cooking spray
Directions.
To gain an extra measure of flavor, I like to steep the milk with onion and herbs before making the sauce. Smoked Gouda works great for the second cheese.
1. Place bread in a food processor; pulse 10 times or until coarse crumbs form to measure 2/3 cup. Set aside.
2. Combine 1-1/2 cups milk and next 6 ingredients (1-1/2 cups milk through garlic) in a saucepan, and bring to a boil over medium heat. Remove from heat; cover and let stand 30 minutes. Strain milk mixture through a sieve into a large bowl; discard solids.
3. Preheat oven to 350 degrees.
4. Place flour in a small bowl; gradually add 1/2 cup milk, stirring with a whisk until blended. Add flour mixture, mustard, salt, and red pepper to milk mixture, stirring well with a whisk. Stir in macaroni and cheeses; spoon into an 8-inch square baking dish coated with cooking spray. Top with breadcrumbs. Bake at 350 degrees for 25 minutes or until lightly browned. Yield: 5 servings (serving size: 1-1/2 cups).
Thanks for the recipe. Funny, my 4 yr old won't eat shaped pasta, only the elbow macaronni and straight noodles of any sort. I just took two bags of grape cluster and tropical shaped pasta (palm trees, dolphins and flowers) to his school for crafts because I've given up on my boys eating them. Maybe the cheddar in this recipe will make the sauce orange enough that they might try it. Thanks again.

We made Smoked Corn cakes...the smoked came from the gouda...we had leftovers last night..YUM! I dont remember which issue, but if interested, I could find out!
