OK. Maybe a dumb question, but the Tahini I just bought doesn't say anything about how to store it once opened. Maybe that's an indication that there are no special storage needs, but it almost feels wrong not putting it in the refrigerator. Anyone?

You should refrigerate tahini after opening as it could get rancid and will keep longer. When you use it, let it get room temperature so it will soften and be easier to use.

According to the Food Companion you should refrigerate after opening forup to 2 months. A quick tip they listed says to turn the jar over and let the oil redistribute itself throughout the paste, this should be done every few days

On the subject of Tahini, has anyone ever seen it available in small jars? I never seem to use the whole jar and I hate wasting food.
