Do you think the sausage part of the recipe would work if you used only turkey instead of the turkey and pork? I don't care for pork.

Mindy- I posted a review on this on Friday night. The sausage was very tasty, but I'm thinking it might be a little dry, or bland, if it didn't have the addition of pork in it. That's kind of what made it taste like "real" sausage. If you try it, let me know how it turns out!

I haven't made this, yet, but plan to; not sure myself if I'm going to use pork either. Perhaps substituting ground beef or sirloin may prevent the dryness Sue refers to. I do agree, though, that all turkey may be too bland.

I made this the other night and thought the sausage was great - but then again I added some garlic and went a little nutty on the crushed red pepper. My experience with this kind of recipe and turkey/chicken is that you need to add some moisture but otherwise you'll be fine.
