I pulled this together last night with what I had in the fridge, and it was one of those cases of the end result being much greater than the sum of its parts! I chose orzo as my pasta, as I wanted something lighter than the usual spaghetti, and here's what I found in the fridge:
Home made pesto
A small piece of fresh mozzarella
Parmesan cheese
A tiny bit of 1/2-1/2
Fresh spinach
So I drained the orzo over the spinach, returned all to the pot and added a small amount (2-3 Tbsp) of warmed 1/2 1/2 and stirred to coat, then added pesto to taste. I put half of the mixture into a pasta bowl, added the mozzarella then remaining orzo/spinach mixture. Dusted with a bit of Parmesan. YUM! It was almost like risotto meets grown-up's mac n cheese (only not very cheesy :rolleyes: ).
Anyhow, if you've never introduced your pesto to your orzo...I highly recommend it.
