I want to make the banana-coconut crumb cake from 1998. It calls for 3 T of 1 percent milk, but right now I only have skim in the house. Do you think the recipe will still work?

I freely substitute whatever milk I have on hand in recipes... usually 1/2%.

I don't think it would make much difference.

I've never had a problem substituting different percent milks in recipes. Go for it!

I made this last night (along with beer bread too) since the oven temp was the same for both recipes. I used Lactaid 1 % milk and it works fine.About this time my hubby must be http://www.cookinglight.com/bbs/frown.gif because he forgot to take the cake to work. I guess coffee break will be minus crumb cake
