View Full Version : Can I freeze fresh asparagus?

I bought some lovely asparagus on sale two days ago at Whole Foods, and already it's Thursday and I haven't used it. I have a huge anatomy exam on Monday, so I don't anticipate doing any real cooking until after that.
Can I freeze the asparagus so it won't go bad before I use it? Will anything happen to it? It's so pretty, I don't want to waste it!

I would guess so, since you can buy frozen spears. I've never done it though. I think if I was going to I would prep it first.

Here's what Better Homes & Gardens has to say:
"Blanch small spears for 2 minutes, medium for 3 and large for 4. Cool quickly (run under very cold water/icebath). Fill containers; shake down, leaving a 1/2" headspace."
