This week I cooked a last minute weeknight dinner party for a visiting couple, and grabbed the recipe from March 2000 for the Basil & Feta Shrimp--cooked with orzo in a foil bag. I really liked it when I originally made it, and I made it again in the Fall, but it was a grand slam another time on Wednesday night! Isn't it great to have even a short 'portfolio' of known winners that don't take half a day to produce! This one is in the oven about 18-20 minutes (the recipe says 25--too long), just long enough to toss a salad together...
Delicious!

I am with you. I post my "keepers" in a blank book that I have divided into sections and love looking over the recipes and remembering how great they all are.

My recent example, using a staple CL recipe, is about a week ago, we were having a stranded hubby and child (poor baby could hardly survive with wife on a business trip, we decided to save him). Anyway, I digress, I had some leftover beans which I pureed to make a soup...just did'nt work. So I tossed it. We were running short on time and my sweet hubby said, how about that great tomato sauce. So I whipped up some CL "Quick and Easy Pasta Sauce", which was, once again, quick, incredibly tasty and had everyone raving. I am convinced.
