How long do you think they would keep in the fridge, covered with alum. foil? I just made the chipolte chicken pasta last night and have a good bit of a can left. I was thinking it would keep for 2 - 3 weeks. Am I off-base here?

Beth H, I have kept chipoltes in a tupperware container in the refrigerator for MONTHS now (I am somewhat embarrassed to say!) but I just made the chunky-chipolte stew the other night and they were still perfect.

I'm making the Chipotle Chicken Stew tonight. I'm cutting down the recipe so I will have most of a can of chipotles left. Can these be frozen without destroying their texture or taste? TIA

The Food Companion syas that you can freeze chiles for up to six months but this is referring to fresh chiles. I would think that you could freeze them in a ziplock bag.
