I'm a newby to this - Step 4 of the Whiskey Flavored Pork Chops in the Man with a Pan article in Jan/Feb issue states to "wrap handle of skillet with foil". The only reason I can think this would be for is to not melt plastic handles , but I can't believe this would do it and wouldn't want to gamble any of my handles. Would some kind sole please enlighten me about the purpose of this? Thanks.
I've been wondering the same thing! And the next question I have is...if I want to use a well-seasoned cast iron skillet, can I leave off the foil?
Anyone out there have the answers?

Yep, the foil thing is just to protect your handle. If your cookware is ovenproof, it should survive the experience without the protective armor. Thus answering the 2nd question, cast iron would not need to be wrapped.
