View Full Version : Chicken breasts with goat cheese

DH and I went out to a nice restaurant on Saturday night and had a fabulous dinner. It was twiced baked potatoes, steamed veggies and chicken breast with goat cheese and asparagus. I tried to duplicate it tonight and we thought my effort was actually moister than the restaurant one. Here is what I did:
4 chicken breasts, boneless and skinless, butterflied
basil paste (I used basil pesto as it was what I had)
sesame oil (I omitted because I used pesto)
pepper to taste
goat cheese (mine was herbed)
4 asparagus spears, grilled
I butterflied the chicken, then pounded flat. Spread basil peso, then pepper and then goat cheese. Add the asparagus spear and roll and secure with toothpicks.
Bake at 400°F for 20 - 25 minutes. Check to see if chicken is done. Mine took 25 minutes.
I served this with demi-glace, baked potatoes and mixed veggies.

Lonetree - thank you soooo much for posting this - you made me look like a star cook. :) I used parmesan instead of goat cheese and added a bit of roasted garlic and we had some tasty chicken! DBF thought it was a good way to eat vegetables since they were "hiding" inside the pesto and chicken! :) He quizzed me on the process so that he can recreate this masterpiece on his own.
I served it with pesto and parm roasted tomatoes and a generic salad. And a bottle of 1997 Cab that was deeeeeee-licious!
For those wanting to read a story... here's how I came to make this dish. I went to Atlanta to visit DBF, and since his birthday's coming up I wanted to make him something nice for dinner. The exact contents of his refrigerator: beer (Miller, Coors, Bud), Diet Coke, pasta, jar of pesto, container of parm cheese, tortillas, a bag of salad (because he knew I was coming) and some salad dressing. Freezer: 5 boxes of Hot Pockets and a bag of costco chicken breasts. I look at that and think, "what the heck can I do with this?" - jump on the website, search for "pesto chicken" and find Lonetree's post. All I had to do was stop by Whole Foods for some veggies and we were set.

Glad you enjoyed the chicken recipe LonghornGal. I have made this a number of times now.I just love coming to this site and picking a recipe that someone has recommended which meets our tastes. My husband has complimented me on several occasions saying that we are eating 5 star quality food so thanks everyone.

all I can say is thank you very much!! I made this last night and it got rave reviews from HB (honey bunny). I would have been happy to go out an pay for this meal. I did have to sub feta cheese for goat cheese.... HB does not like the goat kind, but the flavor was there.
I think I will make this next when the girls come over for dinner.
