The top of my lemon squares look like an omelette. What did I do wrong? Did I beat the eggs to long? The directions send to beat until foamy. How long do you generally beat them for?

I was expecting the top to look nice and creamy....

hmm.....I don't know what they taste like. They just came out of the oven. Should I just put a ton of powdered sugar over the top to cover the top so no one notices?

Yup, that's what mine looked like as well. Just douse it with powdered sugar - they taste wonderful!

Yeah, the "foaminess" sort of sets in when they cook and you do sometimes get that bubbly type top. Yep - just dump lots of powdered sugar on them, they'll still taste fine!

when I made these, they didn't look like an omlette, but they did taste kind of egg-y. not terrible, but just not all that great. there are better lemon bar recipes out there.
