I was checking out the fast meals on CL's home page and a recipe is listed for bean and bacon soup from the September issue. I don't remember seeing that in the issue. Anyway, I did a search and couldn't find anything. Does anybody remember this soup? Did you try it, was it any good? All that kind of stuff.....

There was a bean & bacon soup last year (maybe it was Sept '02?) that was excellent and very easy... perhaps that's the one you are looking for?

Editing - I found it using the recipe search...

Bean & Bacon Soup

INGREDIENTS
3 bacon slices, chopped
1 cup chopped onion
1 tablespoon chili powder
1-1/2 teaspoons dry mustard
1-1/2 cups water
1 tablespoon dark molasses
1 tablespoon red wine vinegar
2 (15-ounce) cans cannellini beans or other white beans, drained
1 (14.5-ounce) can diced tomatoes with garlic and onions, undrained

INSTRUCTIONS

1. Cook bacon in a large saucepan over medium-high heat until crisp. Remove bacon from pan, reserving 2 teaspoons drippings in pan.

2. Add onion, chili powder, and mustard to drippings in pan; saute 3 minutes. Stir in bacon, water, and remaining ingredients; bring to a boil. Reduce heat, and simmer 7 minutes. Partially mash beans with a potato masher.



YIELD: 4 servings (serving size: 1-1/4 cups)

It wasn't the Mexican Ham & Bean Soup, was it? That was either September or October of last year???

It's the recipe MinEaston posted. Thanks for letting me know that it's good and easy, two of my favorite things! :D

I will have to give it a try soon, as soup just sounds good lately.
