As DW said "It's a repeater". Easy to put together and do, and served with roasted asparagus and salad, a meal to eat with DW, DH, SO, family, or for entertaining. The picture in CL Oct 03 is "right on". The only addition I did was to lightly salt and pepper the steaks. The sauce reduced very quickly so watch for that. Othewise, a winner.

Here's the recipe:
Beef Tenderloin Steaks with Red Wine-Tarragon Sauce
1/4 cup low-salt beef Broth
1/4 cup dry red wine
1/2 tsp. all-purpose flour
1/4 tsp. salt
1/4 tsp. dried tarragon
1/8 tsp. black pepper
Cooking spray
2 4-oz. beef tenderloin steaks
2 Tbs. chopped shallots
1 tsp. chopped fresh parsley
Combine first 6 ingredients, stirring with a whisk.
Heat a non-stick skillet coated with cooking spray over medium high heat. Add steaks; cook 3 minutes on each side or until desired degree of doneness. Remove from pan; keep warm. Add shallots to pan; saute 1 minute. Add broth mixture; bring to a boil. Cook until reduced to 1/4 cup(about one minute). Serve sauce with steaks. Sprinkle with parsley. Serving size: one steak, about 2 Tbs. sauce and 1/2 tsp. parsley.

Bumping this because I finally tried it and loved it. Definitely a keeper.
Comes together incredibly quickly though (especially if you like your tenderloin on the rare side), so have the table set and the wine poured before you start. I didn't have shallots so used 2 cloves of chopped garlic instead and it was very good. Also put a bit of blue cheese on top of the steaks while they waited in the oven for the sauce to come together. Yum!

I made this last night and was very pleased with the sauce. So simple to make but great flavors. Loved the tarragon!
