Hi all--
I am relatively new to this forum, but I figured I would go ahead and jump in with both feet. I just got back from a pumpkin/squash festival and seemed to have purchased the entire autumn squash harvest :D I came home with a variety of acorn squash, butternut and some others whose names I can't remember. They all seem to have acorn squash-like qualities. I *love* roasted squash with a sprinkling of brown sugar, but I am looking for some new ideas. Any takers?

I wanted to welcome you to the boards.

There are several good soup recipes for squash. I enjoy it roasted, as you mentioned.

Last night DH split a spaghetti sqaush and grilled it then topped it with marinara and parm. Very tasty. Good luck with your bounty. :p

Welcome! I am making the butternut sqash risotto from the Oct. 2003 issue tonight, i will post back how it is--i am making it with acorn squash because that is what i have. There is also a butternut risotto in the recipe finder that got great reviews. The other day i did a search with "butternut" & also with "acorn" and there were lots of old threads you might look thru if you have time. Happy searching! :D

I just roasted some cubed butternut squash with cipollini onions, balsamic vinegar and a touch of olive oil. Yum:p

One way I have discovered to use up left over roasted squash is to throw it in vegetable soup-- it works great with sweet potatoes too. Usually if it has been roasted, it will break down so that you don't even realize it's in the soup, but it adds a delicious rich, sweetness to most any soup. I have even put it in black bean soup/chili.
