When you say "spices" are you actually referring to herbs? If so, we have two threads which may answer some of your questions:

Hi,
I have a question about freezing fresh spices. Is is possible? I know that is a silly question, but I always have leftover spices from a recipe and then they end of wilting in my fridge? Any suggestions?
