I made this this weekend - it was very good and very easy. I brought it to a friend's for dinner. They loved it and want the recipe. Could I trouble someone with mastercook to post it so I can email it to my friend? Thank you!!

Sour cream coffee cake
1/2 c packed brown sugar
1/4 c chopped walnuts
2 tsp ground cinnamon
1 c granulated sugar
1/4 c butter softened
2 large egg whites
1 c reduced fat sour cream
1 tsp vanilla extract
1 3/4 c flour
1 tsp baking powder
1 tsp baking sodda
1/2 tsp salt
cooking spray
Oven-preheat 350
Combine first 3 ing-set aside.
Place granulated sugar & butter in large bowl, beat with mixer at med speed until well blended @ 5 mins. Add egg whites 1 at a time beating well after each addition. Beat in sour cream and vanilla. Lightly spoon flour into dry measuring cups and level with knife. Combine flour. b powder, b soda and salt, stirring well with a whisk. Gradually add flour mix to sugar mixture and beat well. Spread 1/2 of batter into an 8 inch square baking pan coated with cooking spray. Sprinkle 1/2 of walnut streussel over batter, spread remaining batter over streussel and top with remaining streusel. Bake 45 mins or until toothpick comes out clean when inserted in center of cake. Cool cake on wire rack. 12 servings

I made this last weekend. Hubby gave it a thumbs up. I thought it was better after it sat for a few hours. And my dog- well, she loved it so much, she took the peice that I packed to bring to work and took it right out of my backpack. She seemed to thoroughly enjoy it, too. But she didn't like the smack on the nose she got afterwards. How she unzipped my bag and ate that peice of cake in five minutes, I'll never know.

MrsReber - the bag was left intact? My two girls would have eaten it, bag and all!

Oops - I just realized, you didn't mean plastic bag, as in "baggie", but your backpack! Um, my dogs have iron stomachs, but I don't think they could have handled digesting a backpack!!!

Well, she did cosume much of the foil that it was wrapped in! She gave it a "tails up"- and then ran from me since she knew she was in big trouble. She is quite talented in areas that are of no use to me. She actually opened a tin of butter cookies last week and figured she'd help herself. She's eaten plastic and survived, but give her venison and her stomach is sick for 2 days. My husband made that mistake again on Saturday.

In any event, I digress- the coffee cake was excellent and I am thinking of making another one for our neighbor who is having a baby in a couple of weeks.

I noticed it used egg whites rather than whole eggs. I know in the pound cake, this created an airy, "spongy" texture I wasn't too pleased with. Does this recipe seem to have that texture to anyone? Also, would it be okay to use regular sour cream in place of the light?

My husband did comment that the cake was very light- perhaps that explains why he ate a third of it all at once. I used the light sour cream, I don't know if using regular sour cream would have an effect on the consistency.
