I'm certain I saw a reference to sauteed butternut squash at one time on this BB.
Does anyone have a recipe for this ? TIA

Ginny,

Were you referring to a recipe, or just a mention...I do this all the time, and am certain that I've noted it on the BB at least a couple times, but I don't use a recipe.

Just cube the squash (any winter variety will do, actually)..I don't peel mine because it's such a pain, so I just wash it well...I usually buy organic anyway. Saute it in a bit of olive oil -- a tsp., maybe? with chopped fresh thyme and garlic, if you'd like.

I either serve it by itself, or in whole wheat pasta tossed with blue cheese.

Emily. Thanks. I think it was just mentioned, but it sounded good & I'd like to give it a try.

Maybe someone else will add their ideas too.

Here's a thread on butternut squash... If you try a search (upper right hand corner) you'll get about 25 threads that have mentioned it.
