I made the Vegetable Lasagna from the Helping-Hands Meals article in the Jan/Feb '01 issue. Very tasty and very fast and easy (fast and easy for lasagna, that is.)
I made 3 batches all at once and had the veggies chopped, noodles boiled and lasagnas assembled in a bit under an hour.
I think that the lasagna is pretty tasty; nice, clean taste. I used Muir Glen Organic Tomato-Basil sauce which isn't fat-free, but only has 1 gm fat per serving. I also omitted the carrots as mine tasted bitter.
Also, I thought that the servings seemed a bit large, so I made eight servings instead of six.
This is a definite repeater in my household. I LOVED being able to make a yummy dinner for hubby and deliver a pan of lasagna to sister and her family and another pan to my mom and dad...without going bonkers!
