Some years ago, I had a piece of this cake. The hostess said she either got it from the bag of apples or on the radio (this was 13 years ago!!!). The cake was a single pan cake, spicy and sour. I don't think there was any frosting. It was somewhat like a coffee cake. It seemed like it was pretty simple too. Does anyone have this or a similar recipe? THanks!

PS - I am so glad I found this board!!! :) Everyone has been so nice!!! :)

Welcome to the BB! :)

I found this recipe on the web, not sure if it is what you are looking for, as it has a cream cheese frosting, but thought I would share it. All the recipes I ofund titled" Washington apple cake" had a cream cheese frosting, maybe your friend just left it off?

PS: This recipe definitely does not look light!

Washington Apple Cake

3 eggs
1 1/2 c sugar
1 c. oil
1 tsp. vanilla
2 c all-purpose flour
1 1/2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. salt
1 c. chopped walnuts
4 c thinly sliced peeled tart apples
cream cheese icing

Beat eggs until fluffy. Slowly add sugar, beating until thick and lemon colored. Add oil and vanilla. Combine flour, cinnamon, baking powder and salt; mix into egg mixture. Stir in walnuts.

Arrange apples in bottom of greased 13 x 9 inch baking pan. Pour batter into pan and spread to cover apples. Bake at 350° for 60 min
or until cake tester inserted in center comes out clean. Cool. Spread with cream cheese icing. Chill if desired. Makes 1 cake.

Cream cheese icing:
2 pkgs (3 oz each) cream cheese, softened
1/2 c butter or margarine, softened
2 c confectioner's sugar
1 t lemon juice
Beat together cream cheese and butter until fluffy. Beat in sugar and lemon juice until smooth enough to spread.

This sounds yummy. I am going to try this today to use up some of my apples.

Here is my recipe. It is slightly different (uses more sugar, but less oil), and it is not iced. It is very good!

Washington Apple Cake

3 eggs
2 c. sugar
3/4 c. corn oil
Beat eggs. Stir in sugar and oil.

2 c. flour
2 tsp. cinnamon
1 tsp. soda
Add and mix well.

1 tsp. vanilla
1 c. chopped walnuts
Add to above.

3 large apples (about 1&1/2 lbs.)
Arrange apples, peeled and sliced thin, in the bottom of a greased 9x13" pan. Spread the batter evenly over the apples. Bake at 350 degrees 50-60 min or until tester comes out clean. Cool 15 minutes and dust with powdered sugar.
