I just started subscribing to Cooking Light and in the Dec. 2000 issue in the "letters" section someone referred to the Maple-Walnut Apple Crisp recipe from the Oct 2000 issue pg 102. This sounds really yummy but it didn't give the recipe.Could someone please send me this recipe. I would love to make it for a dinner party I am having this Sat. 1/27. My email is pyle@san.rr.com. Here you go!

MAPLE WALNUT APPLE CRISP
-------------------------------------

1/3 cup all purpose flour
1/2 cup packed light brown sugar
1/3 cup regular oats
1/4 teaspoon ground cinnamon
1/4 cup chilled butter or stick margarine, cut into small pieces
3 tablespoons chopped walnuts
7 cups sliced peeled Rome apples (about 3 pounds)
1/4 cup maple syrup
1/2 teaspoon ground cinnamon

Preheat oven to 375 degrees.

Lightly spoon flour into a dry measuring cup, level with a knife. Come flour, sugar, oats, and 1/4 teaspoon cinnamon in a medium bowl; cut in butter with a pastry blender to two knives until mixture is crumbly. Stir in walnuts.

Combine apple and remaining ingredients in a large bowl; toss well. Spoon apple mixture into an 8-inch-square baking dish or 1 1/2 quart casserole. Sprinkle with crumb mixture. Bake at 375 degrees for 45 minutes or until golden brown. Serve warm.

That Maple Walnut Apple Crisp is DELICIOUS! I just made it last night. You won't be dissapointed!

BTW, any recipes mentioned in the "Letters" section of the magazine are posted on CL's web site (www.cookinglight.com) That's a nice convenience! You might want to check that out and browse through those recipes - you just might find some other delicious things to try, too!

I just made this again tonight. Very yummy and so so easy. Mine tends to get pretty juicy. I don't mind as we just spoon it all up, but I wonder if it is supposed to be like that.

Mine gets juicy, too, but it's just so good that I don't care! This has become a staple at our house because it's so easy. And it makes the kitchen smell so good.

I have to admit- I was expecting to be WOWED by this apple crisp, based on rave reviews from this and other threads. I wasn't :( It was good, but not enough so that I would make it again. I much preferred the Apple-Cranberry Crisp from October '01.

I used real maple syrup, a combination of apples, my Penzey's Vietnamese Cinnamon... and I thought it was rather bland! And a little too runny for my liking.

I made this last night, because it got such raves. Like KValley, I wasn't as impressed with it as I hoped. Part of the reason is that the topping actually got a little burnt, so the walnuts taste really bitter.

Overall, I like the crisp, but will continue to try other recipes. I often find that if I make a recipe because it gets rave reviews here, I am disappointed. Its kind of like going to see a movie that everyone has told you is really great - the reality can't quite live up to expectations! I am glad I tried it though, and DH and I are happily eating it!
