I just have to tell you Lorilea - I made your spinach quiche today/tonight - it is definitely one of the best quiches ever - didn't 'do' the mushrooms as the recipe directions called for as the thread I found the recipe on didn't have amounts - it was just fantastic - thank you!

I'm glad you enjoyed the quiche -- and thank you. I'm always happy to share things that I enjoy so much myself.

I DID omit the mushrooms when typing the recipe the first time -- if you want to add them, use as many as "feels" right. 3/4 cup chopped is probably about right for me.

I have to tell you - I consider myself to be a fairly good cook - my DH was positive I BOUGHT IT - that's how well it turned out!
