Sometimes, ya just don't have the time and/or inclination to make dinner from scratch, even tho it's just so much better than from a box. But all of us find, at one time or another, that we just gotta do what we gotta do, if we want to eat something other than Lucky Charms.
I made my bi-monthly trip to Costco the other day, and of course they had the people in hairnets there, tempting the shoppers with all kinds of goodies. One treasure I found was a boxed chicken tortilla soup from a company called Bear Creek...it's awesome! In 20 minutes, you have a pot of rich, spicy soup that goes oh, so well with the Marie Callender's cornbread from mix that comes in a 5lb bag (just add water). Who could ask for anything more?
But as lovely as this soup is, homemade really is better. And I do love making my own.
Just thought I'd pass this along since 'tis the season and things are about to get hectic for everyone. Ya just can't beat a 20-minute meal. :cool:

I'll confess too:D I bought a box of Krustez (I'm not sure if that's how it's spelled) pumpkin bread mix at Sams. It had 4 pkgs in the box. I subbed Lighter Bake for the oil and a little ground flaxseed and water for the egg. It was pretty good, and when you're short on time, saving even a couple of minutes helps.
My DH likes the Bear Creek potato soup (tasted it at Sams). He occasionally makes it for dinner when I work late.
There are a few things I've purchased because of the samples, and a few I couldn't believe people would buy after tasting them :eek:

DD enjoys going to Costco on Saturdays so we can "have lunch at Costco". I never have trouble getting her to come with me for errands if that's one of the stops! :D

I bought Krusteaz bread machine mix (a variety box), and my yeast was all dead! I was so disappointed! But I didn't take it back and make a fuss because I have plenty of yeast of my own to add.

I made some of Krusteaz low fat orange cranberry muffins and they were the worst muffins i have ever eaten! They tasted medicinal. ick. Usually muffin mixes are a great time saver for me, but that mix really scared me away from the Krusteaz brand!

Well, either I chose the best of their mixes, or when it comes to quick breads and muffins--we eat anything:eek:

I just make some of the Krusteaz fat free cranberry orange muffins and really liked them! I used the Weight Watcher Fiber One trick: soak 3 cups of fiber one cereal in 2 1/2 cups of water until absorbed, pulverize in food processer. Add to muffin mix along with 1 1/2 teaspoons baking powder, the canned cranberries that come with the package, and 1 cup of your own fresh or frozen cranberries and put into 18 muffin tins. The fiber one gives them a more hearty flavor and adding extra cranberries makes them flavorful! I do the same thing with their fat free blueberry muffins.
