I am looking for an oatmeal bread that is not a yeast bread. Does such a recipe exist? Any help is appreciated. Thanks!

CL had an Oatmeal Molasses Bread from Oct. 2002. It was really good with the Mexican Ham and Bean Soup. Do you have that issue?

Oatmeal Molasses Bread

2 cups fat-free buttermilk
1/2 cup regular oats
1/4 cup unsulfured molasses
2 tablespoons vegetable oil
2 3/4 cups all-purpose flour
1 cup whole wheat flour
2 tablespoons sugar
1 1/2 teaspoons salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup raisins
1 tablespoon yellow cornmeal

Directions.
Because it contains no yeast, this dark quick bread takes only a minute to knead and does not require rising time. The dough will be sticky and wet as you knead it. The loaves brown quickly and may appear done before they really are.

1. Preheat oven to 400 degrees.

2. Combine first 4 ingredients in a medium bowl. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, sugar, salt, baking powder, and baking soda in a large bowl; make a well in center of mixture.

3. Add buttermilk mixture to flour mixture, stirring just until moist; stir in raisins. Stir with a wooden spoon until dough pulls together in a shaggy mass. Let rest 2 minutes.

4. Turn half of dough out onto a lightly floured surface. Knead 1 minute with floured hands (dough will feel tacky); shape dough into a 6-inch round loaf. Place on a baking sheet dusted with cornmeal. Repeat procedure with remaining dough. Make 3 diagonal cuts 1/4-inch deep across top of each loaf using a sharp knife.

5. Bake at 400 degrees for 20 minutes. Reduce oven temperature to 375 degrees (do not remove loaves from oven); bake an additional 15 minutes or until bottom of each loaf sounds hollow when tapped. Let stand 15 minutes before slicing.

Yield: 2 loaves, 12 servings per loaf (serving size: 1 slice).

I don't know if either of these is exactly what you're looking for; I've gotten both from the Board. The Maple-Oatmeal recipe is AWESOME (posted I think by TerryTX). I'm assuming you could make a loaf out of it instead of muffins [I'm not as savvy about those things as many of the other culinary stars around here :o] I have yet to try the second recipe - but it sounds good.

Funnybone - the oatmeal-molasses bread sounds right up my alley! I don't have my annual handy right now; if you ever had a chance to post the recipe I'd really appreciate it!! Thanks! :D

MAPLE OATMEAL MUFFINS

These tempting, reduced-fat muffins are a nice way to get started in the morning.

2 cups unbleached all purpose flour
1 cup quick-cooking oats
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup low-fat buttermilk
3/4 cup unsweetened applesauce
1/2 cup pure maple syrup
1/2 cup packed golden brown sugar
1/4 cup vegetable oil
1 large egg
2 teaspoons vanilla extract

Preheat oven to 400°F. Line twelve 1/3-cup muffin cups with paper liners. Combine first 6 ingredients in large bowl and stir to blend. Whisk buttermilk, applesauce, maple syrup, brown sugar, vegetable oil, egg and vanilla in medium bowl until well blended. Add to dry ingredients and stir just to incorporate (do not overmix).

Divide batter equally among muffin cups (batter will reach top of cups). Bake until muffin tops are golden brown and tester inserted into center of muffins comes out clean, about 28 minutes. Transfer to rack and cool.

Makes 12.
Per serving: calories, 231; fat, 6 g; cholesterol, 18 mg; sodium, 276 mg

Banana Oatmeal Bread

1 cup packed brown sugar
7 tablespoons vegetable oil
2 large egg whites
1 large egg
1 1/3 cups mashed bananas -- (about 2 large)
1 cup regular oats
1/2 cup skim milk
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon

Preheat oven to 350. Combine first four ingredients in a large bowl.
Beat well at medium speed of a mixer.

[In another bowl] combine banana, oats, and milk. Add to sugar mixture, beating well.

Lightly spoon flour into dry measuring cups and level with a knife.
[In another bowl] combine flour, baking powder, baking soda, salt, and cinnamon and stir with a whisk. Add to sugar mixture and beat until just moist. Spoon batter into a 9 x 5 loaf pan coated with cooking spray.

Bake at 350 for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack then remove. Cool completely on a wire rack. Yield: 18 servings.

Per Serving (excluding unknown items): 201 Calories; 6g Fat (28.1% calories from fat); 4g Protein; 33g Carbohydrate; 2g Dietary Fiber; 11mg Cholesterol; 194mg Sodium. Exchanges: 1 Grain(Starch); 0 Lean Meat; 0 Fruit; 0 Non-Fat Milk; 1 Fat; 1 Other Carbohydrates

Notes: Could add ˝ cup chopped nuts if necessary. Batter might overflow bread pan – may need a couple muffins on the side.

I made the oatmeal molasses bread tonight. It was good, and easy to make, but not exactly what I'm looking for. I'm looking for a good bread to spread peanut butter on. I really can't get enough peanut butter these days! I know that sounds goofy. Anyway....the loaves turned out nice and pretty. I think I will try the banana oatmeal bread next, it looks like it may have more flavor.
