Completely trivial story... today I made Blueberry Muffins with Reiko (my Japanese student). I whacked off some butter-(the recipe called for 5 tablespoon of melted butter). Reiko was shocked that I wasn't going to measure it. I said I was sure this was about 5 Tbsp. She said she always measures etc. Well what do you know my whack produced exactly 5 tablespoons!:) A fluke- yes but after 25 years of baking I am pretty dang good at estimating.
Sorry to those of you who read this!!!:D :D (I don't have much to brag about!!!:o )

BTW-Reiko has the most amazing sweet tooth. This morning she had the pancakes (loads of syrup) and then a huge chocolate chip cookie. Yesterday she had Key Lime Pie for brekkie. (from the bakery). Can't keep up with her!:eek:

(Edited after I first said it was Paula's Pumpkin Pancakes. We made two recipes and I mixed them up!)

Hey, this just confirms what we knew along -- MAUREEN ROCKS!!! :D

That's funny that (a) Reiko was so shocked that you weren't measuring and (b) that she has such a high S.Q. (Sweet Quotient). :) How long will she be staying with you?'

But I know what you mean, Maureen! I did that the other day with chopped up something-or-other, then tossed it in the cup to double-check. Perfect! It's satisfying.
Are you having fun with Reiko? So much for all our admonitions about our desserts and things being "too sweet", eh? (I wrote in Canadian for you! :D )

I've made Paula's Pumpkin Pancakes a number of times and the recipe doesn't call for any butter. :confused: (That's why I love them!). I guess you have a different recipe than this one:

Paula's Pumpkin Pancakes
2 cups baking mix, lowfat (I use flour and a touch of baking powder)
1 egg
1 1/2 cups skim milk
1/2 cup canned pumpkin -- or fresh cooked
1 teaspoon cinnamon

Mix all ingredients thoroughly in a large bowl Pour small amounts of the batter onto a hot lightly greased griddle or frying pan over medium-high heat.

When bubbles form on the pancakes and the edges begin to brown, flip the pancakes.

OMG You are right Ms. Chevious!!! We also made Blueberry Muffins and that's the recipe with the butter! I am so embarassed.

(Maureen doesn't rock anymore!:( ).
Reiko is here another 3 weeks natasha! (how are you ???)

Nah, you just rock at butter and muffins and suffer with short term recall at times like the rest of us. ;) TG it's not just me! :D

Thanks guys-I wasn't reaching for compliments honest!!!!

Just feels good to "nail" the butter estimate!

Doesn't take much to make me feel good about myself:D I've always been an overachiever!:o ;)

Oh Dear! Does she eat like that back home or is she just trying out the cuisine in her host country and doesn't know what is appropriate breakfast food? I had vanilla pudding for breakfast in 6th grade (what can I say, my brother was having it but don't ask me why my mother allowed this) then proceeded to barf in front of my entire 6th grade class! (Apologies to the squeamish). Ever since then I've been afraid to have anything but relatively bland foods before noon. Reiko must have a hearty constitution!
