Hi,
I am a beginner cook so please forgive me for
my ignorance. I would like to make the Cocoa-Banana Cake (Oct) and it calls for fat free fruit puree. Can anyone tell me what this is. I can't find it anywhere. Is there something I can substitute it with?

Hi MonaE-fat free puree is usually with the baking products (I may be wrong on that one). But if you can't find it, you could probably use applesauce or maybe even prune puree. I hope the cake turns out well!

Actually, in our grocery stores, it's with the oil and shortening. The kind I have is made by Sunsweet and it's called Lighter Bake, although there are several brands and varieties out there. I don't really have a preference, I kind of think they're all pretty much the same. If you still can't find it, below is a recipe from CL where you can make your own....good luck!

Prune Puree

INGREDIENTS FOR 6 SERVINGS:
1/4 cup light-colored corn syrup
2 tablespoons sugar
1 (12-ounce) package whole pitted prunes
2/3 cup water
INSTRUCTIONS:
Place the first 3 ingredients in a food processor, and process 5 seconds. With
the processor on, slowly add water through food chute, and process until
mixture is smooth, scraping sides of bowl once. Spoon puree into an airtight
container, and store in refrigerator for up to 2 months. Yield: 2 cups
(serving size: 1/3 cup).

CALORIES 192 (1% from fat); PROTEIN 1.4g; FAT 0.3g (sat 0g, mono 0.2g, poly

I substitute applesauce 1:1 for oil in almost every baking recipe I make, which isn't many. Thus, I would assume you can use applesauce instead. Better that some of the more experienced bakers advise you probably.

I'm not sure anyone will see this or not, but I was browsing the older posts and came across this one mentioning the Cocoa Banana Cake and using prune puree. I have some that I'd like to use up--could someone please post the recipe for the Cocoa Banana Cake? Thanks!
