View Full Version : Spaghetti Pie, Pumpkin Muffins

I am looking for two recipes. The first, spaghetti pie, was probably published within the last 3 years, but I don't know the issue. I do recall that it was listed as one of the "favorites" by CL testers. The second is for pumpkin muffins and may have appeared recently.

Spaghetti Pie

Amount Measure Ingredient -- Preparation Method

1 lb ground beef, extra lean
1/4 tsp salt
1/4 tsp black pepper
2 8-ounce can tomato sauce
1 1/2 c low-fat sour cream
1/2 c chopped green onions
1/4 c light cream cheese -- 2 ounces
4 c spaghetti, cooked -- 8 ounces
5 ozs reduced fat cheddar cheese -- 1 1/3 cups shredded

Preheat oven to 350.

Cook meat in large skillet over medium heat until browned, stirring to crumble.

Drain well and return meat to pan. (see notes for addition to recipe)

Stir in salt, pepper, and tomato sauce. Bring to a boil, reduce heat and simmer for 20 minutes.

Combine sour cream, onions, and cream cheese in a bowl and set aside.

Put spaghetti in a 2-quart casserole dish coated with cooking spray.

Spread sour cream mixture over spaghetti.

Top with meat mixture.

Sprinkle with cheese and bake, covered, for 25 minutes.

Uncover and bake 5 minutes or until cheese is bubbly.

Perusing another thread, I just found the pumpkin muffins recipe from December 2002. Anyone have the spaghetti pie recipe?

I love that spaghetti pie. It was, what, something like two years ago during the summer that it was featured in "Lighten Up"? I virtually lived on it while on a major weight loss "project" and couldn't get enough.

Of course, eventually I lost it. Last week when I first came on board here, after a couple days I used the search mechanism and found it right away, so it's funny to see it come up again now!

The search mechanism here is really impressive. Even better is the good will among the many posters here who are all willing to help out and type recipes to share, which I am most appreciative of.

I am glad you find the Search thing helpful...I never seem to find what I want.:(
