View Full Version : need advice asap on lindrusso's spinach balls

I just made up a batch of lindrusso's spinach balls and I want to bake them tomorrow night. Can I keep them in the fridge overnight or should I freeze them? I just don't want them to get soggy. It says to "refrigerate or freeze" until ready to bake, but I'm not sure how long they would stay good in the fridge. any advice?

Spinach Balls

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 (10-ounce) packages frozen chopped spinach -- thawed and squeezed dry
2 cups crushed herb stuffing mix -- (like Peppridge Farms)
1 cup firmly packed grated Parmesan cheese
1/2 cup butter -- melted and cooled a bit
4 green onions -- chopped
3 beaten eggs
1 dash nutmeg

Combine all ingredients in a large bowl. Shape into 1-inch balls. Cover and refrigerate or freeze until ready to bake. Arrange spinach balls on an ungreased cookie sheet and bake about 15 minutes at 350º or until lightly browned. Serve with your favorite mustard for dipping.

I have never kept them in the fridge overnight, but I'm guessing they would be fine? If you don't want to take the chance, you can just freeze them - there is no need to thaw before baking, but you may need to extend the baking time a little.

Sorry I couldn't be of more help. Maybe someone who had tried this will chime in. :)

Mmmmm....just tonight the boys were asking which holiday we would be making these for - they are a (usually Thanksgiving) tradition around here.

Thanks Alysha! I was hoping you'd be on the board. I think I'll just pop them in the freezer. I've done that in the past and it works great. :) Can't wait to eat them!

I think it makes at least 30, maybe more. I am always preparing them for a fairly small crowd along with other appetizers so I never think to count. Seems to me I used to get about 36, but I must be making them bigger lately, because I think I tend to get about 30 nowadays.

I counted them earlier, and I ended up with 39 spinach balls. :cool:

I'm curious to know what you decided to offer as a dipping sauce. I think our favorite is some sort of mustard, be it a sweet one or not. What'd you use?

I made a double batch and got way more balls, I stopped counting at 77 balls and still had at least 1/3 of the mixture left to roll out. That is when I noticed the spinach was supposed to have the water squeezed out.

They turned out really amazing anyways.

I was curious though, did anyone ever try to successfully lighten them?

I made them with 6 T. butter once and they weren't quite as good. They were still good, but I decided it just wasn't worth it to skimp on the butter. JMHO
