I am cooking a birthday dinner for my Dad's birthday this Sunday. He and my mom started the Atkins diet a couple of weeks ago, so I would like to cater the meal to that diet. I would also like to come up with a dessert in lieu of the traditional birthday cake. Any great ideas for a menu? He typically likes fairly mainstream fare...

Thanks so much!

Kristi:

The dinner part is easy. You need to have a green salad, a protein (meat, chicken, turkey, fish, seafood), and a green vegetable. Desserts are trickier :D Most cheesecake recipes (especially if you sub Splenda for the sugar) are Atkins friendly (use a nut crust). You can check out atkins web site (www.atkins.com) for some recipes.

There are some other threads floating around as well that address this question. Here are other threads with Atkins in the title from Great Food search results (http://community.cookinglight.com/search.php?s=&action=showresults&searchid=386900&sortby=lastpost&sortorder=descending)

Oh great! Thanks, Tyra! I will checkout the links. I have never paid much attention to any discussion of Atkins until now.
