I made this recipe for my office once and have somehow managed to lose or misplace the CL magazine which it came from. I think it was fall 2000 sometime. It had this fabulous cream cheese icing - i can't find it by searching the CL website. Does anyone have it handy? thanks!

Granny Smith Apple cake
3 c flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
1 tsp ground nutmeg
2 c diced Granny Smith apple
1/4 c chopped pecans
2 c granulated sugar
1 c applesauce
1 tsp vanilla extract
3 large eggs
Cooking spray
Icing:
1/2 c butter or stick margarine softened
1 8 ounce block fat free cream cheese softened
1 1/3 c powdered sugar
1 tsp vanilla extract
Oven-preheat to 325.
Prepare cake:
Lightly spoon flour into dry measuring cups, level with a knife. Combine flour and next 4 ing (flour-nutmeg) in a large bowl, stir with a whisk. Add apple and pecans and toss gently to combine. Make a well in center of mixture. Combine granulated sugar, applesauce,1 tsp vanilla and eggs in a bowl, beat with mixer at med speed just until moist. Spoon into a 13x9 baking pan coated with cooking spray. Bake 55 minutes until wooden pick inserted in the middle comes clean. Cool completely on a wire rack.
To prepare icing:
Beat butter and cream cheese with a mixer at med speed until smooth. Add powdered sugar and 1 tsp vanilla, beat just until blended. Spread icing over cake

1/4 cup chopped pecans
2 c granualted sugar
1 c applesauce
1 tsp vanilla
3 large eggs
Cooking spray
Icing:
1/2 c butter or stick margarine, softened
1 *oz) block fat-ree cream cheese, softeneded
1 1/3 c powdered sugar
1 tsp vanilla
1. Preheat oven to 325º

Add apple and pecans, toss gently to combine. Make a well in center of mixture. Combine sugar, applesuace, vanilla and eggs in a bowl, beat a medium speed of a mixer until well-blended. Add to four mixture. Stir until just moist. Spoon batter into a 13x9 baking pan coated with cooking spray. Bake for 55 min or until toothpick inserted in center comes out clean. Cool completely on wire rack.
3. To prepare icing, beat butter and cream cheese with a mixer at medium speed until smooth. Add powdered sugar and vanilla; beat just until blended. Spread icing over cake. Yield 16 servings.
