Made this one tonight and it was great. And very fast since I prepared the sausage right after lunch. We'll have this a whole lot - nice that the sausage recipe is so big will make the pizza a snap 3 more times! Anyway I was so impressed with Don Mauer's recipes I just ordered one of his books - can't wait to get it!

Bossy, thanks for the review. One question...the one I always ask...just how spicy is the sausage? My husband can't take the heat and I'm wondering if I need to tone it down. Thanks

i am SOOO excited about this sausage. it is fabulous!!! it is "fluffy" like restaurant pizza sausage, not rubbery like the butcher's turkey sausages in the casing. i don't think i'll ever buy those again!!! the pizza on the whole was very good but maybe needed a little pizza sauce.

shoyski... yes, very spicy... you will want to tone it down, for sure!

It might depend on what level of spiceness you prefer. I made this last week, and my husband and mom, both of whom cannot handle spicy foods, thought the sausage was great. It really does taste like sausage topping you'd get at a restaurant! I can't wait to thaw the rest out and make another pizza!

I posted yesterday about this pizza also and wanted to say again how great this sausage is. My husband, who's a big sausage fan, loved it -- I never may buy the "real" stuff again, which is great for both of our healths!

Actually I didn't find the sausage particularly spicy - but unfortunately one person's spicy isn't anothers so maybe just to be careful you should tone it down a bit - for my spicy loving family I might just add a bit more next time. Good Luck!

ok... i can handle A LOT of spice (college in new orleans) and i still thought this was pretty spicy for the average person. However, it is QUITE possible that i did not measure the pepper flakes but just added them freely... in fact, VERY possible! http://www.cookinglight.com/bbs/smile.gif

Andrea, where did you go to school? I went to Tulane (Newcomb, class of '90). Could we have been there at the same time?
