View Full Version : ISO buttercrunch cookie recipe

hi all!

i am determined to find a recipe for the yummy buttercrunch cookie i used to get at 7-11 of all places!!! but they discontinued them awhile back and i would love to be able to bake em myself...

i am not sure what its like....it has toffee square chips that are sort of gooey/crunchy when you bite into them?

anyone have a recipe? or have a good idea how to make em?

hi chloe, I bet these aren't exactly the same, but from the looks of the recipe I'll bet they are great!

Butter Crunch Slices

Filling:
1 cup (6-ounce package) butterscotch pieces, melted
1 cup finely chopped salted peanuts
1/4 cup peanut butter
1/3 cup sweetened condensed milk 1 tablespoon softened butter
1 teaspoon vanilla extract
Dough:
1/4 cup peanut butter
1/2 cup softened butter
1 cup flour
1/2 cup sugar
1/2 teaspoon salt
1/2 cup quick-cooking rolled oats
Combine all ingredients for filling. Chill while preparing dough.

In large mixing bowl, combine ingredients for dough. Blend well with mixer. Divide dough in half. Pat out each half on waxed paper to a 12- by 6-inch rectangle. Spoon filling down center of each rectangle. Fold one side of dough around filling and then the other. Gently shape into a log.

Wrap; chill at least 2 hours.

Preheat oven to 350 degrees. Cut dough into 1/4-inch slices. Place on ungreased cookie sheets. Bake for 12 to 15 minutes. Cool 1 minute before removing from cookie sheets.

Makes about 6 dozen.

If they're like the ones I've bought at 7-11 (and also at Sam's), they're like a sugar cookie with toffee bits mixed in. At the store, look for Skor's bits, Butter Brickle (I think) or Heath Bar Bits. Then either use a sugar cookie dough or choc chip dough, with or without choc chips.
