Anzac Biscuits

Amount Measure Ingredient -- Preparation Method

1 cup regular oats
1 cup all-purpose flour
1 cup packed brown sugar
1/2 cup shredded sweetened coconut
1/2 teaspoon baking soda
3 tablespoons water
1/4 cup stick margarine or butter -- melted
2 tablespoons golden cane syrup (such as Lyle's) or -- *see note
light-colored
corn syrup
Cooking spray

1. Preheat oven to 325 degrees.

2. Combine first 5 ingredients in a bowl. Add water, margarine, and syrup; stir well. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 325 degrees for 12 minutes or until almost set. Remove from oven; let stand 2 to 3 minutes or until firm. Remove from pans; cool completely on wire racks. Yield: 2 dozen (serving size: 1 cookie).

NOTES : Note: We found these cookies were much better when made with golden cane syrup. Cane syrup is thicker and sweeter than corn syrup and can be found in supermarkets, in cans, next to the jellies and syrups or in stores specializing in Caribbean and Creole cookery

What the heck's Anzac Day, and why should you care? Anzac Day marks the first major battle fought by Australian and New Zealand soldiers during World War I. The troops, known as Anzacs (which stands for Australian and New Zealand Army Corps), landed at Gallipoli on April 25, 1915, and their battle against Turkish soldiers lasted eight months. That date has become the Down Under equivalent of Memorial Day in the United States; Aussies celebrate with solemn dawn ceremonies, parades, and, no doubt, gatherings 'round the barbie.

We at Cooking Light aren't exactly specialists in South Pacific history. We know about Anzac Day because several years ago, a reader sent in a recipe for a cookie she called Anzac Biscuits. Despite what we thought was a strange name, we tried the recipe, and immediately did a little digging to find out to whom we owed praise for this wonderfully chewy, oaty cookie, which has since become one of our favorites. We don't know whether the biscuits were standard Anzac grub or not—but they sure are staples around here.
