In a recipe book I've come across the ingredient "apple pie spice". Anyone know what spices and correct proportions it would take to make this? Seems silly to go looking to buy something when it's bound to be pretty much cinnamon. Thanks!

Most likely it is allspice, cinnamon, nutmeg and maybe cloves.

According to Mastercook, you can substitute 1 tsp of Apple Pie Spice with: 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, 1/8 tsp ground allspice, and 1/8 tsp ground nutmeg.
And because I was curious, I looked up allspice. Again according to Mastercook, you can substitute 1 TBSP of allspice with: 1 tsp ground cinnamon, 1 tsp cloves, 1 tsp nutmeg.
Now are you curious about Pumpkin Pie Spice?? http://www.cookinglight.com/bbs/smile.gif

bossy,
I received apple pie spice free from Penzey's when I placed an order with them.
I never received a raving review for my apple pies until I used apple pie spice. I was amazed at the flavor. -KimD

I also have this spice blend from Penzey's. I've used it in apple crisps/cobblers. It smells heavenly.
Penzey's description, including what's in the blend:
Use 1-2 tsp. for an 8-inch apple pie. Great for muffins, use 1/2 tsp. per Cup of batter, add to coffee cake or rolls. For sugar cookies, add 1-2 tsp. per batch. Sprinkle on regular or French toast, add to waffle or pancake batter, 1/4 tsp. per Cup. Hand-mixed from: China and Korintjie Cinnamon, nutmeg, mace and cloves.
