My recipes all say I can make my giblet stock a few days in advance. I assume that means I'd have to take the turkey out to thaw about 5 days in advance (3 days to thaw). Is this okay to have the turkey thawed that early???

don't know all that much about turkeys since i only do them once a year, but i would think you could probably be able to get the giblets, etc. out of the inside of the bird after it has started to thaw a little, so you wouldn't necessarily have to wait for it to thaw completely. and as long as you keep it 40 degrees or cooler then you shouldn't have any problems with the bird. hope this helps!
