Yes, I will admit it - I am a little scattered lately. Does anyone have handy the Rustic Potato Chowder recipe (I think from 1999)? It is made with yukon gold potatoes, parsely and carrots?

Amount Measure Ingredient -- Preparation Method

Parsley Butter
1 cup fresh parsley leaves (about 1 bunch)
1 tablespoon stick margarine
Soup
6 cups water
3 1/2 cups fresh parsley sprigs (about 1½ bunches)
4 1/2 cups Yukon gold or red potatoes (about 2 lbs.) -- peeled and cubed
3/4 cup carrots -- cubed
1 teaspoon salt
Directions:
Prepare the parsley butter by combining the ingredients in a food processor and processing until well-blended; set aside.
To prepare the soup, combine the water and parsley sprigs in a large saucepan and bring to a boil; reduce the heat and simmer for 15 minutes; strain the mix through a sieve, reserve the broth and discarding the solids.
Return the broth to the pan and add the potatoes, carrots and salt; bring to a boil, reduce heat, and simmer for 15 minutes or until the vegetables are tender.
Remove about 1½ cups of vegetables from the broth with a slotted spoon; place remaining soup and vegetables in a food processor and process until smooth; return the processed soup and the reserved vegetables to the pan and bring to a boil; then stir in the parsley butter and serve.
