A couple of weeks ago FH and I went out to eat and I had the pretzel-crusted MahiMahi, one of the evening's specials. It was so delicious so I decided to re-create it at home. It turned out great, and was very easy so I thought I would share. :)
2 salmon fillets
1C pretzels finely crushed (I measured the pretzels before I crushed them so it is one cup whole pretzels)
1/4t dry mustard
2T Dijon Mustard (any kind of mustard would work)
1 large egg - beaten
Cooking Spray
Crush pretzels in a shallow dish (I used a meat tenderizer mallet, but a food processer would probably be quicker). Miz dry mustard in with crushed pretzels. Dip salmon fillets in beaten egg, dredge in pretzel mixture. Place fillets on a baking sheet sprayed with cooking spray. Bake at 350 degrees for 15 minutes. Remove from oven and top each fillet with 1T mustard (I squirted a zig-zag design straight out of the bottle).
