Here's another review from the Seattle supper club that met earlier this week. I'm posting for my friend Kristi who is having computer problems.
A very easy to prepare dish. All of the reviews were positive:
- So refreshing; very tasty.
- Perfect salad to accompany an entree.
- Spicy; good to take to someone's house.
- Wonderfully tangy dressing.
- Great contrast between sweet fruit & the dressing.
- Really liked the flavors of teh dressing.
- Next on the menu at my house!

Here's the recipe, I actually found this on the boards awhile back and still haven't had the chance to make it! It's gotten alot of great reviews.

Greens with Creamy Berry Dressiing
Cooking Light May 1999 p.110
1/3 cup Craisins
1/4 cup balsamic vinegar
1/4 cup light mayonnaise
1 tablespoon Dijon mustard
1 tablespoon water
1/2 tsp. sugar
1/4 tsp. black pepper
2 garlic cloves, crushed
6 cups torn romaine lettuce
1 cup seedless red grapes, halved
1 cup thinly sliced cucumber
1 cup fat free plain or seasoned croutons
1/2 cup thinly sliced red onion, separated into rings
1. Combine cranberries and vinegar in a small bowl. Cover and let stand 30 minutes. Add the mayonnaise and the next 5 ingredients (mayonnaise through garlic); stir well with a whisk. Cover and chill.
2. Combine lettuce and remaining ingredients in a large bowl; add dressing, tossing gently to coat. Serve immediately.
Yield: 6 servings (serving size 1-1/2 cups)
