Turkey Breast Cutlets in Port Wine Sauce-First off I used chickne breast. I used 2 "Dolly Parton" sized and cut them in half and pounded them down some, then followed the recipe. This is a very flavorful, rich sauce. Just enough sauce to drizzle over the top for extra flavor. This went together pretty quickly and was easy.
Rice Pilaf with Shallots and Parmesan-Good with the chicken. I served the chicken on top of the rice then drizzled with the Port wine sauce-YUM. The rice dish was very good, but it wasn't anything very different than you've had before.
Orange-Glazed Carrots and Onions-now this was different for us. I have never had carrots cooked with onions like this (sure in other things, but not in this way). This may just be my new favorite way to serve them. Excellent was said by all. This made enough for 6 servings, but we ate almost all of them (enough left over for 1 serving)
