View Full Version : question: refreezing homemade ice cream?

Hi! I made some pumpkin spice ice cream in my Cuisinart ice cream maker for Thanksgiving. My daughter has had a fever for the last 3 days so we postponed our Thanksgiving until tomorrow with my family (luckily we all live in the same city) now that she is well.

I realized today that I forgot to blend one ingredient with the cold mixture the day that I froze it. Can I just let the ice cream thaw in the refrigerator, blend in that ingredient (the sour cream) and then refreeze in my Cuisinart as directed? I think it would taste ok without the sour cream but if I can do it right to correct it that would be great. Thanks for your help!

The only problem I can see would be the ice crystals that may form due to condensation while it's defrosting, JMHO!
