Recipes to use leftover turkey meat

We still have a bit of leftover turkey and it needs to be used up. We are sick of just the usual turkey and sides. Anyone have some good recipes for leftover turkey. Just not a noodle soup recipe (we already had leftover matzo ball soup.)

I did a search and didn't come up with anything.

I didn't find that thread, I searched under turkey instead of Thanksgiving. Thanks, I'll check it out.

My DH and I both loved the "Post-Turkey Day Posole", a stew in the Nov. 03 CL. If you like spicy, I recommend it. It used 2 c. leftover cooked turkey. Katie

I fixed the Turkey Jambalaya last night for me and DW. Easy and very tasty. It calls for a 1/2 tsp. of red pepper. Still pretty hot after cutting that back a bit. Great flavor and easy to prepare. I would highly recommend it. It's on pg. 313 of CL 2002 Annual Recipes.
