Hi Susan,

The Orange Cranberry Bread recipe on the back of the Ocean Spray Cranberry bag is very good.

Susan, I hope someone lets us know the freezer shelf life of cranberries - I still have a bag in the freezer from last holiday season too and have been wondering.

I have used them older than a year to make cranberry sauce and it was just fine. I've not tried anything other than sauce though.

I used year old cranberries in apple/cranberry crisp and it was fine!

I always stock up when they are on sale and in season (usually now!) and use them the next year without a problem. I have a delicious cranberry bread recipe that I am required to make every year for our family get-togethers. I'd be happy to post if you are searching for recipes...

Thank you for the info, everyone!

Carrie, I will have to check out that recipe the next time I get a bag. Thx!

andi, I would LOVE for you to post your recipe! It sounds like a winner if you are requested to make it every year. Thx!

So, now that we've determined that cranberries keep for one year in the freezer...has anyone kept them longer than that???

Yeah, I've kept them longer than that...much longer...like about 3 years. I found them when I was defrosting. But like I said above, I have only made the sauce with them and they were just fine.

Speaking of cranberries - - - anyone have a good cranberry sauce recipe??

Perhaps I'm a little uncreative, but I've found that I really prefer the cranberry sauce recipe from (guess where) the back of the Ocean Spray bag. I like mine chunky...not the jelly like what comes in a can.

Hello Fellow CLers~

How long do cranberries keep in the freezer? I have some in my freezer from last Thanksgiving and wonder if I can still use them. Also, does anyone have a very basic cranberry bread recipe? I searched the bboard but didn't find one.

Thanks!
Susan

Wow, I'm glad somebody asked this question! I also have a bag from last year! And Carrie, I completely agree, chunky cranberries all the way. I can't stand that odd gelatin kind of sauce. Very weird.

OK-Here's my cranberry bread recipe! My family hates nuts so I don't usually add them...

Mom's Cranberry Bread

2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup sugar
1 cup cranberries (fresh or frozen, washed and chopped or halved-I use my food processor)
1/2 cup chopped nuts
1 beaten egg
3 tblsp. oil
1 cup orange juice

Sift dry ingred. together. Add cranberries and nuts. Add eggs mixed with oj and oil, mix slightly. Bake in greased loaf pan @ 350 x one hour.

* I always double the recipe to use the whole bag of cranberries. This is sooo moist and good! I think I may need to make some!

Oh look! I'm a member now!! I've gotten my wings!!! http://www.cookinglight.com/bbs/smile.gif

By the way, CL had a great cranberry sauce recipe a couple of years ago...It was chunky and great. I'll look for it-it ran with their Thanksgiving stuff.

I have used yr old cranberries on baked goods. When I pull them out of the freezer I use a colander run cold water and check them out.I discard those that don't look ok.
About cranberry sauces I have some good recipes when my computer returns from intensive care I will post some recipes for you

I've tried the Dried-Cranberry Spice bread and it was very good. You can find the recipe using the recipe finder and searching for 'cranberry'.

andi--ditto the thumbs up on the cranberry bread! I happened to have all the ingredients on hand (except the nuts) and I threw this together last night! Very yummy and so very easy! My favorite type of recipe.

Anyway, thanks again for your mom's cranberry bread. I know I'll be making this alot during the holidays...and other times too, I'm sure.

ps...Just had a piece with my coffee--drool, drool. http://www.cookinglight.com/bbs/wink.gif

OK! I confess! I have used them after 4 years in the freezer!!! http://www.cookinglight.com/bbs/eek.gif They were just great, I'm guessing its one of those things that could remain frozen for decades and still work. Now with all these bread recipes maybe I can manage to stop the cranberry abuse. http://www.cookinglight.com/bbs/redface.gif

So glad everyone has enjoyed the cranberry bread recipe! I made some this weekend for a family "Thanksgiving" since some of our family won't get to be here for the real one. We consumed both loaves in one meal!!
I also just saw a recipe for an apple cranberry sauce that looked quite tasty that I plan to try soon (I'm pre-testing some turkey day ideas). I'll let you know if it's a good one.

I made your Mom's cranberry bread last night and it's a keeper. It's so good and using OJ instead of tons of oil and eggs makes me feel guiltless! Thanks for the recipe! ( I did cook it less than 1hr. I don't know if my oven temp is off.)

I made two loaves this weekend because all my family was coming home and I thought this would make an easy breakfast one morning. It is very good and we liked it toasted in the oven for a very few minutes. Nothing like warm bread!

Here's another way to use cranberries that no one has mentioned. We have a recipe for cranberry venison stew from the Northwest Bounty cookbook which is a great one (recipe and cookbook). It has inspired us to toss cranberries (frozen or fresh) into lots of dishes with red meats, with very good results. Apparently cranberries have an enzyme in them that is a natural meat tenderizer. Its the tart flavor we like best though.
